Thanks for stopping by, I’m Nicole. In 2013 I launched mason jar salads to show busy Mom’s and Dad’s that we got this. We can pack lunch, get to work, trip over toys, practice sight words AND cook healthy delicious meals for our family. Ain’t nobody got time for sick kids! The recipes on the blog are simple, one dish meals that provide real vitamins and nourishment that taste good. The kids might not love kale but they don’t need to eat packaged stuff there are plenty of vegetables in the sea.
It’s not all about the food though. We can also find time for ourselves (wait, what’s that?) to maintain sanity or to get it back. I might be working on finding my sanity after having my third son in December, but I have some tricks up my sleeve that I happily share! This is a team effort.
Truth is it wasn’t that long ago that I was partying too much. Staying up too late. Eating fast food. Even when I was cooking for myself it wasn’t with foods that were beneficial to my body. I had high cholesterol. I was tired, getting sick often and my skin looked terrible. My entire life was out of whack because of my lifestyle.
With small changes over the last several years I have reduced my cholesterol, shed some pounds and ultimately feel and look better! How could I keep this information to myself?!
In addition to being a full time working Mama to three handsome little dudes (sometimes feels like four sorry, Paul) I am a certified Holistic Health Coach.
